Get ready to prepare the best, tastiest and easy Chicken Quesadillas ever!
As a working mom I’m always looking for easy and tasty recipes for weeknight meals. I came up with this chicken quesadillas recipe a couple of weeks ago, after I finished cooking chicken fajitas and ended up with leftover chicken. I guess you can say it is a chicken fajita quesadillas recipe because it has the same flavor and ingredients as fajitas.
You can definitely prepare the chicken in advance or use leftover chicken. That’s exactly what I did!
The red peppers and onions add extra flavor and texture to this recipe.
Start by seasoning the chicken with this delicious fajita seasoning, plus olive oil and about 1 tablespoon of lime juice. Let the chicken marinate for about 30 minutes and then cook the chicken for about 15 minutes. Until golden brown.
Once the chicken is cook through, add the onions and red peppers. Stir.
Make this easy chicken quesadillas by placing one flour tortilla in large skillet on low heat. Add the chicken, fallowed by cheese and cover with another flour tortilla. Press a little bit and carefully, using a large spatula, flip the tortilla over.
Cut in small pieces and serve with sour cream, pico de gallo or guacamole. Yum!
What can be better than that?
Remember! You can make the seasoning in large batches and use it as you need it.
