Arepitas de Maíz…Ahhhh! So good.
A simple finger food made with cornmeal, eggs, butter, milk, sugar and salt. Some people like to add anise.
Crunchy on the outside, soft inside…Goodness!
Where’s my coffee?
First, we need to mix the cornmeal, salt and sugar with hot milk and melted butter.
Let it cool completely. Add the egg and mix well. If you do it while the mixture is hot, you might get scrambled eggs.
Fry the corn fritters in hot oil until golden.
Here’s the recipe.
- 2 cups of Cornmeal
- 1 1/4 cup of milk
- 2 teaspoons of sugar
- 1 teaspoon of salt
- 1 teaspoon of unsalted butter
- 1 egg
- anise (optional)
- Oil for frying
Preparation:
Mix the dry ingredients and set aside.
Heat the milk with the butter and add to the cornmeal mixture. Make a dough and let it cool completely.
Once cool, add the egg and mix well.
In a frying pan, heat the oil over medium-high heat.
Drop the dough one spoonful at a time and fry until golden brown.
Transfer to a plate with paper towels to absorb the extra oil.
Serve hot.

Johanny
