Boost your energy with this carrot and beet juice, perfect all year around.

Hi y’all, It has been a while since I posted something here– nine months to be exact! So I figured why not shared a recipe for something healthy and delicious, plus an Eco-friendly item that I love.
Let me explain…
Why a healthy juice?
Although as a child I was not a fan of any vegetables, today I can honestly say I love them, and that they have become part of my daily diet. As kids, one of the easiest ways we consumed vegetables was in juices, and I remember my abuelo used to make us drink carrot and beet juice all the time, with the excuse that because of their nutrients we would grow taller–by the way it didn’t work for me! but they are very nutritious indeed!
Why going green?
My daughter has been talking about “saving the turtles” or in other words, “go green” and to stop using plastic items, such as straws and plastic bags. To be honest, I love the idea of buying environmental- friendly items, therefore we have been using recyclable bags when we go shopping, and instead of plastic straws, we have been using these amazing stainless steel straws from Eco At Heart. They are perfect for cold drinks and better yet, perfect for the environment.
So now, we are not only eating healthier, but we are helping mother earth 🙂
This recipe is rather simple, and all you need to do is wash the veggies (no peeling required!) and blend them with lime, orange or lemon juice, just keep in mind that it is a healthy drink, therefore is does not contain added sugars, but you can always add some to taste.

Here is the recipe!
- About 2 beets, washed, scrubbed and trimmed.
- About 3 medium carrots, washed, scrubbed and trimmed.
- The juice of one lime
- Sugar to taste (Optional)
- 1/2 cup of water (Optional only if using blender)
- If using the blender: cut the beets and carrots in small pieces and blend with water and lime juice. Strain and serve immediately over ice.
- If using the juicer: Follow your juicer’s instructions and serve immediately over ice.
