The holidays are here and soon enough it will be 2016! which means it is time for entertaining and enjoying some quality time with family and friends. If you didn’t know, I like to cook 😉 and one of my favorite dishes during the holidays are these cassava balls stuffed with cheese. Cassava or yucca is a root vegetable very popular and common in the Latin culture. The Yuca root can be eaten boiled, mashed or fried just like a potato. By the way, you can substitute the Cassava with potato in this recipe!!!
The recipe for the bollitos de yuca requires boiling the cassava or yucca, making the balls and then frying them for a couple of minutes until golden brown.
Follow these steps…
- 1-2 peel and boil the cassava
- 3-4 drain and remove the inner core of the cassava
- 5-6 mash the cassava and add the cheese
- 7-8 cover with egg and flour
- 9-fry until golden brown

For this recipe I used Kraft Natural Shredded Cheese Sharp Cheddar, but you can use mild cheddar as well. Which I bought at my local Walmart.
