If you follow me through social media you have probably seen many pictures where I show my weekend brunch. And if you pay close attention, most of time I feature pancakes. I LOVE pancakes and I love to incorporate ingredients that I have in my refrigerator just to make it fun.
What you probably don’t know is that most of time what I use is Aunt Jemima pancakes because they are so simple to prepare. I like to use the Aunt Jemima Buttermilk Complete mix. You can be very creative and add different flavors like blueberries, strawberries, lemon zest or chocolate chips and top it off with Aunt Jemima original Syrup. Yum!
What I love about this recipe that I’m about to share is that my whole family enjoys it; for some reason pancakes are one of those foods that brings happiness and the family together.:)
Getting the ingredients for this recipe is not brainer since I can find most of them at my local Walmart.
I like to make this recipe on Saturday or Sunday mornings. We eat brunch together before tackling our weekend activities.
Chocolate Chip Pancakes with strawberries and whipped cream
- Serving: about 12 pancakes
- Prep Time: 5 Minutes
- Cook time: About 4 minutes per pancake.
Ingredients:
- 2 Cups of Aunt Jemima Buttermilk Complete Mix
- 2 Cups of Water
- 1/2 a cup of chocolate chips
- 1/4 cup of fresh strawberries, hulled and sliced
- Whipped cream
- Aunt Jemima Original Syrup
- 1 teaspoon of butter to grease the skillet
Preparation: Combine the pancake mix and water, stir. Add the chocolate chips and mix (do not beat or over-mix the batter). Let it stand 1-2 minutes.
Heat the skillet over medium-low heat.
Pour about 1/4 cup batter for each pancake onto lightly greased skillet. Turn once when pancakes bubble and bottoms are golden brown.
Serve the pancakes with fresh strawberries, whipped cream and Aunt Jemima Original Syrup.
This is the perfect recipe for weekends morning.
