A non-traditional version of the classic tomato soup with the bold and fresh flavors of Clamato® Tomato Cocktail.
Así es…Clamato! The base for this tomato soup is Clamato Tomato Cocktail. This authentic tomato cocktail that spices up all your parties and family get-togethers, and in this case, it’s going to spice up my Lent menu.
Let me explain…
During the Lenten season, the weather starts to get slightly warm here on the East coast, therefore, we try to spend more quality time as a family, (or like we say in Spanish ” convivir en familia“) doing stuff that we enjoy, such as hiking, visiting parks and all that good stuff that we can not do when it’s freezing outside, so the less time I spend in the kitchen, the better.
I came up with this idea of adding this yummy cocktail to tomato soup as I was visiting my nearest Walmart. Tomato soup is not common in Latin cuisine but it has become one of our favorites dishes, and since it does not have any meat, it has become one of our staple dishes during the Lent season.
I’m using Clamato as a substitute for vegetable stock or chicken stock, after all, we use this delectable cocktail for many recipes–from delicious shrimp ceviche to a perfect Michelada. I also, take advantage of the fact that I can use Clamato as my shortcut to create meals my family will enjoy any time of the year!
Tomato soup with grilled cheese croutons
This recipe is rather simple; very economical, and all ingredients are found at Walmart. No excuse to not head to your nearest store where you can count on Everyday Low Prices when shopping for home, and grocery essentials.
Method:
These are the easy steps to make the soup.
1-In a Dutch oven, cook a diced onion with three tablespoons of olive oil until soft.
2-Add two cloves of garlic and cook until fragrant.
3-Now open a can (28 oz) of peeled Roma tomatoes.
4-Place the tomatoes in a blender with the onions, garlic, about a teaspoon of fresh thyme leaves, and a cup of Clamato cocktail juice.
5-Blend until smooth.
6-Transfer to the Dutch oven and let it simmer for about 25 minutes. Season with salt and black pepper.
7-Make the grilled cheese croutons by generously buttering one side of a slice of bread ( I like sourdough bread for this) and place butter-side-down onto a preheated skillet. Sprinkle with cheddar cheese. Butter another slice of bread and place butter-side-up on top of the sandwich.
8-Grilled until lightly brown and cheese is melted.
9-Cut into small bite-sized pieces to garnish your soup.

- 1 medium onion, diced diced
