I love chicken in garlic sauce– is one those recipes that brings back memories of when I was a kid…
I remember the first time I tried this dish. I was a little girl; My family and I went to this restaurant near the beach, and while everybody was ordering seafood I decided to go for this dish called “pollo al ajillo”. IT WAS SO GOOD.
Throughout the years I’ve been trying to recreate the exact recipe but of course that’s a little hard as I don’t know exactly what ingredients were used in the original recipe. I did came up with a version close enough to the original one and I love it! plus, I’m adding my daughter’s favorite vegetables: Mushrooms.
Easy Chicken in Garlic sauce:
- 1 lb. boneless chicken breast. Diced/
- 1/2 cup of white wine
- 1 chicken bouillon diluted in 1 cup of warm water
- 1/4 teaspoon of black pepper
- 6 garlic cloves, sliced
- 1/2 lb. Cremini mushrooms, cleaned and sliced or halves.
- flour to dredge
- the juice of one lime
- 1/2 cup of olive oil
- Parsley (optional)
Preparation
-Wash the chicken breast with cold water and the juice of one lime. Discard the water and juices.
-Pad dry and season the chicken with black pepper only. Dredge the chicken in flour.
-In large skillet over medium-high heat, heat the olive oil and fry the chicken pieces until golden. about 5 minutes.
-Remove the chicken from the pan and set aside.
-Add the garlic to the skillet and cook until aromatic.
-In the same skillet pour the chicken stock followed by the wine. Add the cooked chicken and mushrooms, let it cook on medium heat for about 15 minutes.
-Sprinkle with fresh parsley
OMG, the best chicken ever!
Since the recipe contains chicken bouillon, there is no need to add extra salt!
Serve over rice or pasta.
