I’ve been making this corn muffin recipe for quite some time; It’s one of my favorite recipes. So easy to make, it’s perfect for breakfast, lunch or dinner.
This recipe calls for vanilla, which give these muffins a great sweet flavor but feel free to omit for a more savory taste.
Here is the recipe…
Yield about 12 muffins
Recipe:
- 1 Cup of Cornmeal
- 1 Cup of all purpose-flour
- 1/2 cup of white sugar
- 1 egg, beaten
- 1 cup of buttermilk (see recipe for homemade buttermilk)
- 1/2 cup of melted and cooled butter
- 1½ teaspoon of baking powder
- 1/2 teaspoon of salt
- Vanilla (optional)
Preparation:
Preheat oven to 400ºF. Line a muffin pan with muffin/cupcakes liners.
Combine the Cornmeal, all purpose flour, sugar, salt and baking powder in a large bowl.
Add the melted butter, buttermilk, vanilla and beaten egg to the dry ingredients, Combine well. Do not over mix.
Spoon the batter into the prepared muffin cups and bake for about 20 minutes or until a toothpick inserted in the middle comes out clean.
