Summer is here and the grill is on!
I love grilled vegetables, specially when the weather is extremely hot and I want a dish that gets cooked in a matter of minutes.
In this episode of Johanny’s Kitchen I’m grilling some zucchini and eggplant…
Why?
Because I love zucchini! This lovely vegetable is a great option for the grill and is healthy too.
And eggplant, because my family loves it.
This is how I make my grilled veggies.
I cut the ends and slice the vegetables
Coat the veggies with spices and olive oil…
Cook for about 5 minutes on each side.
Recipe for the seasoning.
For 2 zucchinis and 1 big eggplant you’ll need:
- Garlic powder 1/4 teaspoon
- Onion powder 1/4 teaspoon
- Dry oregano 1/3 teaspoon
- Olive oil. About 1 tablespoon.
- Salt and pepper to taste
Pre-heat the grill. Coat the veggies with the seasoning and grill until they have nice grill marks. Vegetables should be soft.

Yes, we grill eggplant, zucchini and peppers like this as well! We sometimes add fresh basil and drizzle a little balsamic vinegar after. Yum!

Yes, yes! Grilled veggies are the best – and I love grilled eggplant more than anything. These look delicious and now my stomach is officially grumbling… might have to go grab these for dinner!
