These Pesto Chicken and Mozzarella Sandwiches are my daughter’s new obsession, with only 6 ingredients, they are so easy to make!
I enjoy cooking and catering to my family, and while it can be tedious at times, one of the perks of being home is that I have more time to learn and develop new recipes, as well as recreate our favorites dishes from local eateries. For instance, the recipe I’m sharing today is inspired by a sandwich that my daughter tried a few months back (maybe more) at a local restaurant and that unfortunately, we have not been able to visit due to social distancing.
This recipe is rather simple since it only requires six ingredients, and many of them can be purchase at Walmart either with their online grocery service or delivery.

The ingredients:
Bread: For this recipe, I’m using Sara Lee® Butter Bread, but feel free to use any other Sara Lee® Bread variety such as Sara Lee White made with Whole Grain Bread, or Sara Lee 100% Whole Wheat Bread; or if you prefer to bring out the sweetness of your family moments Sara Lee Honey Wheat Bread will work as well, plus Sara Lee® bread is the soft and smooth family favorite perfect for lunch boxes or delicious at home sandwiches–So any variety will work!
I Like Sara Lee Butter Bread cause it adds the classic flavor combination of bread and butter to your family’s favorite sandwiches. With its rich, buttery taste, wonderful aroma, and velvety texture, this bread brings a delicious flavor to everything you make. Plus Sara Lee Butter Bread contains no high fructose corn syrup, no artificial colors or flavors, 0g trans fat and it is low in fat, cholesterol-free food (butter adds trivial amount of cholesterol to this product.
Grilled chicken: You can use leftover chicken breast (That’s what I did) as no specific seasoning is required. Another good idea is to get store-bought rotisserie chicken!
Roasted Peppers: A good old jar of roasted pepper will do the trick.
Mozzarella cheese: I love the combination of mozzarella cheese with the rest of the ingredients, plus it is a cheese that melts really well. For this recipe, you can buy any brand that you like.
Pesto: This green sauce made with basil, cheese, pine nuts, olive oil, and garlic has a unique flavor. Nowadays, good jarred pesto can be found at any grocery store–just get your favorite and voila!
Arugula: This dark green leafy vegetable will give your sandwich a punch of flavor in every bite. If fresh arugula is not available, baby spinach or even watercress will work great.

Ingredients
- Sara Lee® Butter Bread Toasted
- Thinly sliced grilled chicken breast Leftover rotisserie chicken works well too!
- Mozzarella cheese
- Roasted red peppers Jarred or fresh
- Fresh Arugula
- Prepared pesto
Instructions
- Spread some pesto on the bottom half of your toasted bread. Top with mozzarella, roasted pepper, chicken, and arugula. Spread the top half of your toasted bread with more pesto and cover your sandwich!
