Entertainment food at its best! Nothing like a delicious pico de gallo and guacamole to make the party extra fun.
Since my daughter’s birthday falls in the summer, we celebrate with a pool party every year. I remember for 10th birthday (5 years ago), I made these two dips/appetizers for the first time–Guacamole and Pico de gallo. Pico de Gallo is a based tomato salsa commonly eaten with almost every Mexican dish, I mean, from quesadillas to tacos…you name it! Now, Guacamole…Hello? Who doesn’t like Guac? The savory, creamy, spicy, delicious concoction of fresh avocados, onions, cilantro, and lime!
Both recipes are easy to prepare, and as you will see, the ingredients are basically the same. The only difference is that one is made with avocado as the main ingredient and the other with fresh tomatoes.
How to pick the main ingredients:
Believe it or not, choosing the right ingredients is super important. By not doing so, you will end up with a Pico de Gallo or guacamole with the wrong texture and even flavor.
For the Pico de Gallo: Make sure the tomatoes are firm. I love Roma tomatoes for this recipe as they are less juicy than “regular tomatoes,” but if Roma is not available, use any tomato that feels firm to the touch.
For the Guacamole: Hands down the best avocado for guacamole are the Mexican ones or Hass avocados; They are extra creamy compared to other avocados–believe me, I’ve tried them. Choose an avocado that the skin color has changed to all-dark, and they are still firm to the touch.
Once you have the right ingredients you are set for the perfect guacamole and pico de gallo!
Here’s the recipe.
Pico de Gallo and Guacamole
Ingredients
Pico de Gallo
- 6 Roma tomatoes diced
- 1 small onion diced
- ½ cup cilantro leaves
- 1 Jalapeno pepper seeded and deveined
- the juice of one lime
- salt to taste
Guacamole
- 4 Avocado Hass
- 1 small onion diced
- 1/2 cup cilantro leaves
- 1 Jalapeno pepper seeded and deveined
- the juice of one lime
- salt to taste
Instructions
For the Pico de Gallo
- In a large bowl, combine all the ingredients with the lime juice and salt. Taste for flavor and add more salt if necessary. Let it sit in the fridge for a few minutes before serving.
For the Guacamole
- In a large bowl, combine all the ingredients with the lime juice and salt, mash with a fork or potato masher until desired consistency. Taste for salt and add more if necessary. Place in the fridge tightly covered if not serving immediately.
You can even add it to your favorite taco!
