Shrimp Scampi is a dish that I LOVE to eat when the weather starts to get warm. It’s easy to make, therefore you will not spend too much time in the kitchen. I used linguini but you can use any pasta that you like.
Dredge the shrimp slightly with the bread crumbs.
Love the melted butter over the shrimp and pasta;
Love the garlicky flavor (yum!)
Love the taste of fresh Shrimp;
Love, Love Love!
And talking about love; Father’s day is approaching, so this is the perfect opportunity to make this dish for all the dads out there.
Here is the recipe.
- 1 Pound of shrimp, Peeled and deveined.
- 1 Box of Linguine pasta.
- 1/2 Cup of good white wine
- 1/4 Cup of fresh lemon Juice
- 4 Garlic Cloves, Sliced or minced
- 3 Tablespoon of butter
- 3 Tablespoon of Olive oil
- Bread crumbs (for thicker sauce)
- Salt and Pepper to taste
- Parsley, Chopped
Preparation: Boil water and add about a teaspoon of salt to it. Throw pasta in the boiling water and cook until just done or al dente. Drain and reserve about 1 cup of the liquid.
Bread the shrimp slightly with the bread crumbs. Set aside.
Heat the butter and olive oil in a large skillet over medium heat. Add the garlic and cook 2 to 3 minutes. Add the Shrimp and cook for another 2 minutes. Add the lemon juice, wine, and pepper. Stir and reduce the heat to low.
Add the cooked pasta to the skillet with the shrimp scampi and toss. Add some of the pasta liquid if too thick. Taste for flavor, add salt and pepper if necessary.
Sprinkle with chopped parsley.
Enjoy!
XO,
Johanny
