Hola! Since Summer began I’ve been in the kitchen trying and creating refreshing recipes; actually about a week ago, I shared a delicious drink recipe for “Tinto de Verano” (Summer Red Wine); a chilled drink made with Sutter Home Merlot, Lemon lime soda and lime slices. It was soo good!. Well, I went to my local supermarket and bought another bottle of Sutter Home wine, this time I bought Pinot Grigio.
As I was heading home I was thinking of recipes that I could pair with this wine. White wine goes really well with seafood. So I though to myself why not make a popular Latino recipe: Ensalada de Camarones (shrimp Salad) but what else could I make to complement this refreshing seafood dish?… Hello? Tostones Rellenos! (Tostones Filled with shrimp salad).
This recipe is quite simple. All you need is Platanos verdes (green Plantains); cooked, deveined and shelled shrimp; red or green peppers, onions, fresh cilantro, lime juice, salt and black pepper.
TIP: Buy the shrimp already cooked from your local market!
To make the shrimp salad: combine the cooked shrimp with the diced peppers, diced onions, cilantro, fresh lime juice salt and pepper, refrigerate for about 20 minutes.
To make the tostones: Peel and cut the green plantains into 2″ pieces. Deep fry for about 8 minutes. Remove from the oil. Place the cooked plantains in a muffin pan and press carefully with a pestle. Fry again until golden brown and fill with the shrimp salad.
Here is the recipe for about 4-6 people:
- 3 Green plantains, peeled and cut into 2″ pieces.
- Canola Oil for frying
- 1 Pound of cooked shrimp, deveined and peeled with no tails on.
- 1 Large green or red pepper, diced.
- 1 Medium onion, diced.
- 1/2 cup fresh cilantro, chopped
- The juice of one lime
- Salt and black pepper to taste.
Preparation:
For the shrimp salad: Combine all the ingredients except for the plantains and oil. Refrigerate for at least 20 minutes.
Peel and cut the plantains. Fry for about 8 minutes. Remove from the oil. Place the cooked plantains in a muffin pan and press carefully with a pestle. Fry again until golden brown and crispy. Place the cups in a tray lined with paper towel. Sprinkle with salt.
Fill the cups with the shrimp salad. Serve immediately.
